A nutritious, tasty and economical meat? Poultry meat from Spain exists

AVIANZA, the Spanish Interprofessional Association of Poultry Meat, and the chef and nutritionist Marta Verona, wanted to join together to promote food use and healthy eating with poultry meat as the protagonist.

In a world where food waste and health concerns are constantly growing, wasteful cooking has become a rising trend. Not only is it a way to reduce food waste, but it also promotes a healthier lifestyle.

have come together to make these delicious and healthy recipes:

Guacamole toast and homemade turkey cold cuts

Ingredients for 4 people):

For the guacamole:

  • 2 avocados
  • 1 tomato
  • 1 lime
  • ¼ red onion
  • The leaves of a bunch of coriander
  • 1 tablespoon extra virgin olive oil

For the turkey cold cuts:

  • 1 turkey breast
  • 1 teaspoon sweet paprika
  • 1 teaspoon oregano
  • 1 pinch of salt
  • 1 pinch of pepper

Needs:

  • 2 boards (one for vegetables, one for turkey)
  • 2 onion knives
  • 1 medium bowl
  • 2 ultra Zip bags
  • 1 pot
  • Support spoons and forks
  • Kitchen paper

Elaboration:

  1. We start with the turkey cold cuts, to do so, we clean the surface well with the help of kitchen paper.
  2. We coat the turkey breast with the spice mixture and place it in the zip bag.
  3. Place the breast, along with the bag, in a pot with boiling water and cook for 25 minutes.
  4. While we let it cool, we prepare the guacamole. To do this, we chop the tomato and onion into very fine cubes or brunoise.
  5. In a bowl, add the avocados, which we will mash with the help of a fork. Add the juice of half a lime, the olive oil, the chopped cilantro along with the tomato and onion. We mix the whole well and we have it!
  6. On the bread that you like the most, add guacamole and, on top of it, slices of the turkey cold cuts.

A healthy and useful cooking workshop

These recipes were made Martha Verona in cooking workshop with AVIANZA in Madrid's Mercado de la Paz. During this event, the chef shared with the attendees the best options for cooking the different parts of the birds, their different uses taking into account the healthiest alternatives, as well as different recipes where the use and reuse of poultry meat prevailed.
